The Relationship Between Sensory Quality and Market Price of Rice in Korea

Abstract
The sensory quality of 54 milled rice samples on sale in Korea was evaluated by trained panel, and the relationship between price and quality of rice marketed in Korea was investigated. The overall qualities of rice were in the range of 4.57-7.14, while the market price of rice in Korea at the beginning of 1998 was in the range of 34,500-47,000 won/20§¸. The results of regression between price and sensory quality of rice showed that high priced rice did not guarantee high quality, thus resulting in low R©÷(0.02). Even though the rice price did not differ depending on cultivated region, rice price marketed in southern part of peninsula tended to be lower than those in northern part. The result of the study suggested that the guideline for discrimination of rice by quality rather than cultivated region should be established to enhance the quality of rice marketed in Korea and to strengthen the rice industry.
